The farm's coffee is produced under shade with agroforestry systems and good agricultural practices.
35% of the farm's area is protected as a forest reserve area located within the "El Arenal" National Nature Reserve, which is one of the few Nebliselva Forest Reserve areas in Nicaragua. In this misty mountainous area, there are several protected water sources that provide drinking water to the community of Escaleras north of Yasica. Water production in the mountainous area of ​​the farm is abundant and feeds the Yasica River basin.

The forest area of ​​the farm is an important habitat and refuge for the flora and fauna of the region. Animals observed include black panthers, jaguars, deer, wild boars, coatis, guatuzas and birds such as the three-watted bellflower and the quetzal. The logo, which is a Black Panther, includes the presence of wildlife and represents the importance of wildlife on the farm.

Maria Felicitas not only owns La Verona, but also another farm called San Antonio which is right next to La Verona. A small school for young children was built on the San Antonio farm. Children from both farms who have not yet entered primary school have the opportunity to attend school there. This school is used not only for children's education, but also for adult education and as a leisure space.

History :

Maria Felicitas' family has a long history of coffee. Verona has been acquired from its ancestors since the 1920s. The farm was unjustly expropriated in 1983 by the Sandinista regime and President Violeta Chamorro returned it to the Mairena family in 1996. At that time the finca was in a state of desolation and had to be rebuilt from almost scratch.

La Verona farm coffee was selected in the list of the 20 best coffees in Nicaragua of the 2018/2019 harvest. ​​He was also a semi-finalist in the 2022 Nicaraguan Cup of Excellence.
The farm's coffee varieties are: Caturra, Red Catuaí, Castilla, Colombia, Marsellesa, Obata and Parainema.
The Verona farm was one of the first farms to export its coffee under the concept of Estate Coffee to the Italian city of Verona between the 1950s and 1960s.

Varieties and processes
The coffee varieties from both farms are: Caturra, Red Catuaí, Castilla, Colombia, Marsellesa, Obata, Parainema and Salchimor.
The processes that take place on the farm are washed, natural, honey, anaerobic (washed, natural and honey), carbonic maceration (washed, natural, honey) and green cherries under anaerobic fermentation.

The process
The coffee is prepared by hand when the cerezas have a high degree of maturity between 19 and 23 degrees Brix. The coffee is transported from the field to the humedo in small plastic boxes so that the cereza of the coffee is not broken. In addition, moisture floats on the grains to separate the living grains and then they are placed in containers equipped with air valves so that only the gas produced from anaerobic fermentation does not enter the leaking air. The coffee ferments anaerobically in the containers for a total of 72 hours. Then, the macerated cereals for the benefit of Sajonia Estate coffee are transferred to the plastic crates. The seco benefit is placed on the coffee in African camas directly on the ground for 8 hours to lower the humidity. Then the waxes are observed slowly for 28-30 days on dark Bajo African clothing in Saran tunnels with 80% shade percentage.
